Protein Pumpkin Crumble Bars

Looking for a delicious sugar free pumpkin treat? Then you have to try this recipe!
SERVINGS
12 Servings
How to store
Refrigerate for at least 1 week
  • 300 grams of pumpkin puree
  • 1/4 cup of sugar replacement 
  • 1 tablespoon of greek yoghurt
  • 2 eggs
  • splash of vanilla 
  • add in some flavour drops
  • scoop of vanilla protein
  • 1 1/2 tablespoon of coconut flour
  • 2/3 cups almond flour 
  • dash of aniseed powder (love this)
  • dash of pumpkin spice (or for my dutchies speculaas spice)
  • 1/2 a teaspoon of baking soda
  • handful of pecan nuts
  • and of course a chopped up protein bar (optional)

For the Crumble:

  • 50 grams of butter (softened)
  • 1/2 cup of oat flour
  • 1/4 cup sweetener 
  • dash of pumpkin spice 
  • some pecan nuts
